What’s for dinner :: Quesadilla casserole

IMG_3821-1A couple of months ago we had dinner with our friends Mandi and Brian.
She made this quesadilla casserole and it was delicious!
So I finally found the recipe on her Pinterest and made it myself.
So Yummy! I thought I would share the recipe here..

1 lb ground beef
1/2 cup chopped onion
2 tsp chili powder
1 tsp ground cumin
1 tsp dried minced garlic
1/2 tsp oregano
1/2 tsp crushed red pepper (optional)
16 oz tomato sauce
1 can (15 oz) black beans, drained and rinsed
1 can whole kennel corn, undrained
1 can (4 1/2 oz) green chilies, undrained
6 flour tortillas
2 cups shredded Cheddar Cheese

First you will brown the beef and onion (I of course left out the onions, yuck) in a large skillet on medium-high. Add tomato sauce, beans (left those out too haha!), corn and green chilies. Mix well. Stir in all of the spices except the red pepper. Bring to a boil, reduce the heat to low and simmer for 5 minutes. Add red pepper to taste if desired. IMG_3812Spread half cup of the beef mixture on bottom of the pan, I used 8×11 but you can also use 9×13. (spray the pan first) Top with 3 of the tortillas, overlapping as needed. Layer with half of the remaining beef mixture and half of the cheese.IMG_3819Repeat with the remaining tortillas, beef and cheese.IMG_3821Bake at 350 degrees for 15 minutes or until heated through. IMG_3826I also made some cilantro lime rice.
