What’s for dinner :: Mexican chicken bake

IMG_9836It’s been a long time since I’ve posted a recipe,
so I have one today for you.. An easy one of course.
I saw it on Pinterest but modified it so I could use my crock-pot,
we all know of my love for crock-pot cooking.
Ingredients are: 
 1 lb chicken breast, 1 teaspoon taco seasoning,
1/2 cup red enchilada sauce and shredded cheese.
I first seasoned both sided of the chicken with the taco seasoning,
then through it in the crock-pot for about 8 hours.
(you can grill or saute it if you prefer)
Once it was cooked I shredded it. IMG_9833Then you’ll want to add the chicken to an 8×8 greased baking dish.
Then add some enchilada sauce and cheese..
I don’t ever measure the cheese, there is no such thing as too much to me!IMG_9834I did two layers of the chicken, sauce and cheese.
That’s it! Bake it at 350 for about 20 minutes.

What’s for dinner :: Stuffed Shells

IMG_7218-aI love cooking new things, more than I like actually trying new things.
My mom has made these stuffed shells practically our entire life.
She will normally add spinach but since most of the family isn’t a fan of spinach,
we left it out. (For the record, I would have been okay leaving it in)

The ingredients: jumbo pasta shells, pasta sauce, mozz cheese, cream cheese and ground beef (1 lb)
(if you are my mom you apparently shop for pasta in the discount section)

Brown the ground beef, and cook your pasta according to the package.
(you’re going to want to only cook the shells that are not broken)
IMG_7177Add the full 8 oz. of cream cheese into the ground beef,
then about a cup of mozzarella. (I think a little more would be better) Then again I love cheese.

What’s for dinner :: Meatball sandwich casserole

IMG_6522Are you ready for another ridiculously easy recipe?
It’s so easy you don’t even need pictures,
but I’m a photographer at heart… sooo you get them.
Ingredients are:
Meatballs and sauce (I made my own in the crock-pot)
Baguette french bread and mozzarella cheese
Preheat your oven to 350, and slice your bread.
This is the baguette we got, there were two rolls in the package which was perfectIMG_6516Brush on your olive oil, layer in baking dish
Next, stick your bread in the oven for 10-13 minutes or until the edges are golden brown.

Take them out and layer on your meatballs, sauce and cheese.
(I’m getting hungrier and hungrier just looking at these pictures.)
IMG_6517 IMG_6523Throw it in the oven for 25-30 minutes, make sure it’s heated all the way through.

(**Note: you can use whatever meatballs and sauce you’d like,
the original recipe uses frozen meatballs from Costco,
I just wanted to make my own. Then used a couple cans of Hunt’s spaghetti sauce)
